Three Easy Recipes for Busy Moms


 

If you’re a busy mom, dinner can be one of the most stressful times of day. Meal planning has helped me get through this time and you can read more about that on my recent blog HERE. In the meantime here are 3 of my favorite super simple recipes that my whole family enjoys. Salsa Verde Chicken is great for a busy day since you can throw it in the crock pot or instant pot and not worry about it. Ground Turkey and Veggie Hash is a perfect sweet and savory combo that even my 1 year old devours. Be sure to peel and chop the veggies in advance for a super fast turn around when it is dinner time. This Shrimp Broil is a throw back to my Maryland roots and a summer staple in our house. It doesn't take long but it has multiple steps going on at once so it does take a bit of focus!


Salsa Verde Chicken 2 cups salsa verde 1.5 cups chicken broth (or 1 bottle of light beer) 6 Chicken Breasts (1.5-2lbs) 2 Teaspoon Cumin 1 Teaspoon Salt Mix all the ingredients in the Instant Pot and cook for 25 min or the Crock pot for 6-8 hours on low. Shred the chicken and serve on hard or soft taco shells with avocados, beans and rice.

Ground Turkey and Veggie Hash 2 Tablespoons Olive Oil 1 lb ground turkey ½ onion 1 tsp minced garlic 2 Sweet potatoes (peeled and chopped) 2 green apples (peeled and chopped) 1 bell pepper, beet, parsnip or other root veggie Salt and pepper Heat oil in a large skillet over medium heat and add the onion, garlic, and ground turkey until turkey is browned. Add the sweet potatoes, apples, bell pepper and ¾ cup of water. Salt and pepper to taste. Cover until sweet potatoes are cooked (about 10 minutes). If the water is boiling, turn the heat down slightly. Sheet Pan Shrimp Broil 1 lb baby Dutch yellow potatoes 3 ears of corn, each cut into 6 pieces ¼ butter (or butter substitute if dairy free), melted 2 tsp minced garlic 1 TBSP Old Bay seasoning 1 lb medium shrimp, peeled and deveined 1 lb ground sausage Preheat the oven to 400 degrees. Grease a baking sheet (or use a SLIPAT). In a large pot, boil water and cook the potatoes until tender, about 12 min. Stir in the corn during the last 5 minutes. Combine melted butter, garlic and Old Bay in a bowl. Brown the ground sausage. Place potatoes, corn, shrimp and sausage on a pan and cover with the butter mixture. Bake for 12-15 minutes
